Vegan Mushroom Phyllo Bites
Ingredients:
- 1 package vegan phyllo pastry sheets
- 2 cups mushrooms, finely chopped
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
- 1 tablespoon soy sauce
- 1 tablespoon balsamic vinegar
- 1 tablespoon fresh thyme leaves
- 1/4 cup vegan cream cheese
- 1/4 cup vegan shredded cheese
- Fresh parsley, for garnish
Instructions:
Before you start cooking, heat the oven to 375F 190C
Put olive oil in a pan and heat it over medium-low heat
Put in the garlic and onions, and cook them until they become clear
Soy sauce, balsamic vinegar, salt, pepper, and thyme leaves should all be added now
It's done when the mushrooms are soft and most of the liquid is gone
Take it off the heat and let it cool down a bit
Spread a little olive oil on one sheet of phyllo pastry
Start with one sheet and then add another one
Keep going until you have 4 layers
Based on the size of your tart pans, cut the phyllo into squares or rectangles
Put one square into a tart mold and press it down to make a cup
Put a small amount of the mushroom mixture into each phyllo cup
Put a small amount of vegan cream cheese and vegan shredded cheese on top of each tart
The phyllo should be baked in a hot oven for 12 to 15 minutes, or until it is golden brown and crispy
Before serving, sprinkle with fresh parsley
