Keto Brown Butter Coffee Cookies
Ingredients:
- 1 cup almond flour
- 1/4 cup coconut flour
- 1/4 cup unsalted butter, browned and cooled
- 1/4 cup erythritol or keto-friendly sweetener
- 1 egg
- 1 tsp vanilla extract
- 1 tbsp instant coffee granules
- 1/2 tsp baking powder
- 1/4 tsp salt
- 1/4 cup sugar-free chocolate chips optional
Instructions:
Preheat your oven to 350F 175C
In a mixing bowl, combine almond flour, coconut flour, instant coffee granules, baking powder, and salt
In a separate bowl, whisk together the browned butter, erythritol, egg, and vanilla extract until well combined
Add the wet ingredients to the dry ingredients and mix until a dough forms
If desired, fold in the sugar-free chocolate chips
Scoop tablespoon-sized portions of the dough onto a parchment-lined baking sheet, spacing them apart
Use a fork to gently flatten each cookie and create a crisscross pattern on top
Bake in the preheated oven for 12-15 minutes or until the edges are golden brown
Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely
